We’ve tried it spiced, but how does it fare clear? In short, it’s better, but then that bar was already on the lower side. You can already see the massive amount of sugarcane imparted into this spirit that will eventually mellow and ruin its spiced cousin. You can actually enjoy this in cola though so at least it has that going for it.
The saving grace here is truly the lower price point for Bayou to not ruin their rum further. However, what it makes up for in that regard is still a gut punch of bitter and burning aftertaste that will make you nearly regret not reaching for a Cuervo instead (nearly)
What they Say: “There’s a spirit that runs through the bayous of the land and veins of the residents of Louisiana that’s like no place on earth. From the culture to the cuisine, to the way people celebrate; it’s about living life to its fullest and having some fun along the way. It’s from this place, where sugarcane first came to the USA, that Bayou™ Rum was born.
Silver Bayou Rum is handcrafted in a traditional copper pot still using 10% natural Louisiana cane sugar & molasses by folks that know fine rum. Taste the smooth and subtle character of Silver Bayou Rum over ice or in your favorite cocktail for premium drinkability.Taste the spirit of Louisiana!”
Taste: 5.0 – It’s sugary, with a bit of what seems almost like vanilla and orange – like it’s nowhere near a creamsicle, but it reminds you of one.
Aftertaste: 2.5 – Here though while there’s a late kick of sugar, it’s mostly bitter, and this kind of runs into the smoothness, but it’s not palatable.
Burn/Smooth: 1.0 – There’s a bit of sugar to help the medicine go down, but the medicine, in this case, is a Mack Truck. This will make you make that face, you know the face.
Aroma: 3.0 – There’s a whiff of citrus and sugar, but it’s so subtle, and the rest of the smell isn’t great. BAsically, it’s mostly not there and what is, isn’t good.
Honesty: 3.5 – This at least benefits from not tasting like a damn cookie and kicking you in the teeth like you’d expect from some good ol’ boys. As such it at least fits the theme and looks of the bottle. However, they put the word smooth in their description. And any time we give you a 1 in burn/smooth and you say that shit – BIG FUCKEN LIE. So all points gained are then lost and more.
Mixability: 4.5
W/ Rocks: 3.0 – You expect this to cut the harshness of that burn. It does, but too little too late. It’s just not enough, and this is by no means a sipping rum
Mojito: 4.5 – It’s a basic ass mojito.
Rum and Coke: 6.0 – There is a decent ratio here where you get some of that sweetness from the rum, and none of the bad, and when you hit it – it’s pretty okay.
Value: 6.5 – It’s a full 7 dollars cheaper than it’s spiced cousin. However, unlike that, you can actually use this rum in a drink and not suffer diabetes. As such by being cheaper and more useful it’s value has skyrocketed from its cousin, but let’s not be too hasty – we still need to compare it to others of it’s kind.

Final Thoughts: This overall scored lower than it’s spiced cousin because my the metrics this burned and wasn’t nearly as smooth. However given its proclivity to mixing, and for not tasting like a molasses cookie when given a gun to our heads of which to choose – it will always be this – the silver. So while it may be the numbers be worse, to the regular reader of this site – it is better.
